🥩 Gyu-Katsu – Japan’s Crispy Beef Cutlet

IMG_3864.heic

📍 What is Katsu?

“Katsu” comes from the word katsuretsu (cutlet) and generally refers to a breaded, deep-fried meat cutlet coated with crunchy panko breadcrumbs. The most common version is tonkatsu (pork cutlet), but in recent years, gyū-katsu (beef cutlet) has become a popular and exciting alternative.

Unlike pork katsu, which is served fully cooked, gyū-katsu is usually fried quickly, leaving the inside rare and juicy. Diners can then finish cooking each bite themselves on a small personal grill at the table.

🍴 What Makes Gyū-Katsu Special?

Gyū-katsu is loved for its balance of textures:

  • Crispy coating on the outside, thanks to Japanese panko.

  • Tender, flavorful beef inside, often high-quality wagyū.

  • Interactive dining style, where you grill each piece to your preferred doneness.

It’s typically served with side dishes like miso soup, cabbage, pickles, and a bowl of rice. Sauces may include soy-based dips, wasabi, or a tangy tonkatsu-style sauce.

🌟 Did You Know?

  • Gyū-katsu shops often specialize in just this one dish, perfecting their technique.

  • The cooking method allows beef lovers to enjoy the rich taste of wagyū without it being overpowered by heavy frying.

  • Some places even serve gyū-katsu with barley rice, a traditional and healthy pairing.

🍽️ Other Types of Katsu

  • Tonkatsu – Pork cutlet, the original and most widespread style.

  • Chicken Katsu – A lighter, leaner option.

  • Menchi Katsu – Ground meat patties (often a pork-beef mix).

  • Katsu Curry – A beloved comfort dish where katsu is served over Japanese curry rice.
